Ingredients:
500g streaky pork belly
1 cinnamon stick
3 star anise (also called Da Liao)
5 slices of ginger
6 red dates (optional)
2 tablespoons of dark soy sauce (30ml)
1 teaspoon of salt (5g)
3 teaspoons of sugar (15g)
Instructions:
Prepare the Ingredients:Wash the pork belly and cut it into a block size suitable for stewing. Do not cut it too small, as it may shrink and become difficult to handle during the long cooking process.
Sauté Aromatics:Heat a bit of oil in a pot, add the cinnamon stick, star anise, and ginger slices. Sauté until they release their aroma.
Brown the Pork:Add the pork belly to the pot and cook until it is well-browned on all sides.
Add Seasonings:Pour in the dark soy sauce, salt, and sugar. Stir well to coat the pork belly with the seasonings.
Simmer:Add enough water to cover the pork belly, bring to a boil, then reduce the heat to low, cover, and let it simmer for about 1-1.5 hours, or until the pork belly is tender and can be easily shredded.
Add Optional Ingredients:If using, add the red dates to the pot during the last 30 minutes of simmering.
Serve:Once the pork belly is tender, remove it from the pot and let it rest for a few minutes. Shred the pork belly with two forks and serve it hot.
